Do you know whether one can reply by mastodon to an already existing thread in Lemmy? (In other words, could I have written this in mastodon?)

We do have sorting, but it doesn't seem to be configurable to a default sort - I don't know whether this is a problem with Lemmy or different apps, in any case, I don't know of any app where one could configure a default order within a post. It's possible for the order of posts, though.
